Paleo/ AIP Mother's Day Brunch



Mother's Day is just around the corner and it's time to do something special for the woman who has done so many special things for you over the years. There's no way you could ever repay her for all the sleepless night, packed lunches, homework help and the thousand and one things she's done for you over the years.

BUT, that doesn't mean that a bunch of flowers a heartfelt thanks and maybe this AIP brunch wouldn't be a bad idea in the way of thanks.

Before brunch, here are some interesting facts about moms:
  • There are 2 billion mothers in the world - 85.4 million in the USA

  • In the USA, the average age of new moms is 25 up from 21 in 1970
  • The average mom changes 7, 300 diapers by their child's 2nd birthday
  • Each diaper change takes an average of 2 minutes and 5 seconds which adds up to 3 40-hour work weeks each year
  • Children under the age of 4 require their mom's (or caregiver's) attention once every 4 minutes or 210 times a day
  • 88% of family laundry is done by moms, totally 330 loads and 5,300 articles of clothing a year
  • 40% of college freshman list 'mom' as the most influential person they've ever know.

And how about some facts about Mother's Day:
  • The first Mother's Day in the USA was in 1908 and it was made a national holiday in 1914 by president Wilson
  • Mother's Day is the 3rd largest retail holiday in the USA
  • In Most Arab countries, Mother's Day is celebrated on March 21st and in Indonesia it's celebrated on December 22
  • In the UK, they call it Mothering Sunday and it's the Sunday that's 3 weeks before Easter.
  • The most popular Mother's Day gift is flowers followed by perfume

Now, onto the brunch. If your mom (or you) are following AIP, you may be feeling like there is nothing out there that you can do in the way of celebration. It may seem that way, but that's not the case. Over the years, AIP bloggers and recipe creators have put out some amazing resources perfect just for times like this. Follow along on Pintrest for recipe links that are all AIP all the time and all yummy.

If you don't have time to put together you own brunch menu, here's a little something I put together just for you...


Many of these dishes can be prepped the night before so all you have to do in the morning is gather them together, along with some of mom's favorite flowers and serve her...maybe even breakfast in bed. Or, prepare enough for the whole family and let more enjoy some family time with the promise that you'll clean up afterward. 

Our brunch begins with a Strawberry Mint Chiller, which is a simple, yet elegant drink you can prepare for mom. All you need is a fancy glass, sparkling water, strawberries and fresh mint leaves.

Finely shred 4-5 mint leaves and finely slice 2-3 strawberries. Place these at the bottom of the glass and fill with sparkling water. For an extra special touch, place a slice of strawberry on the rim of the glass.

Next, as an appetizer, while you get the rest of the meal plated, serve your mom some edible flowers.... salmon & avocado roses to be exact. Thinly slice an avocado and place 3-4 slices on a plate as flower stems. Then, tear smoked salmon into pieces (about 1x5 inches - but you want rough edges) and roll them into rose shapes. Place the roses on the avocado stems. This is a great way for kids to get involved in the meal prep. 

For the main course, you'll be serving mom a Breakfast Burger with avocado & bacon slices in a biscuit and a side of 'peach and bacon sweet potato salad' and 'strawberry cucumber salad.' Here are the recipes you'll need to create this dish.
 

Finally for dessert, mom will be enjoying these Blueberry Cheesecake Squares

After a fun AIP breakfast...one that she doesn't have to cook or clean up after.... why not consider continuing the celebration by pampering mom in one of these ways:
(1) take her to the botanical gardens and sit and read together
(2) organize a family photo shoot
(3) go for a walk around a lake or park
(4) give her a foot massage
(5) watch the kids and clean the house while she.... takes a long bath, watches a favorite TV show, or goes out with 'the girls.'
