Past generations might have said electricity, indoor plumbing, airplane travel and the telephone. More recently we could add the internet and smart phones. Today, at least in the AIP world, the greatest invention is the Instant Pot!!!

Think about great inventions for a minute. What do they all have in common? They all make life easier and day to day tasks simpler and quicker. For most of us, gone are the days of passenger ships, checking the mail and waiting for a letter, drawing water from a well or going to bed at sunset because there's no more light in the house.


The Instant Pot does to cooking what the jet engine did to travel....it speeds things up! 

No longer do you need hours to cook a roast or 45 minutes to bake a sweet potato. Cooking can be quick and easy with the instant pot. Add the ingredients, lock the pot, set the timer and wait for your delicious dinner to be ready to eat. My favorite feature of the instant pot is the pressure cooking (read speed) feature, but this handy dandy kitchen tool can also saute and simmer and slow cook and even has a timer to make sure your food is ready when you want to eat it. Plus, it's TONS safer than it's stove top cousin. 

Chances are that if you've been around the AIP block for a while, you've heard all about the Instant Pot and even have one of your own. You may be using it to make broth and 'roast' chickens, but you've had a hard time finding AIP recipes for your favorite kitchen gadget.

Swedish Meatballs and Mushroom Gravy
Serves: 6-8

Ingredients:
1 pound ground beef 
1 pound ground pork 
¼ cup minced fresh parsley (divided) 
2 tablespoons dried minced onion 
1 teaspoon dried sage 
½ teaspoon ground mace 
½ teaspoon sea salt 
2 cups sliced mushrooms (button or crimini) 
1 large onion, chopped 
½ cup bone broth (or coconut milk, or water) 
3 tablespoons coconut aminos


Method:
  1. In a bowl mix together ground beef, pork, 3 tablespoons minced parsley, dried onion, sage, mace, and salt. 
  2. Once thoroughly mixed, form into meatballs about 1-inch in diameter. 
  3. Place mushrooms, onion, broth/coconut milk/water, and coconut aminos into the Instant Pot®. 
  4. Add the meatballs. 
  5. Close and lock the lid. Press the MEAT/STEW button and set cooking time to 35 minutes. 
  6. Once the time is up, quick release the pressure (using the instructions on page 7). 
  7. Using a slotted spoon gently remove meatballs and transfer to a serving platter. 
  8. Using an immersion blender or a high-speed blender, purée the cooked mushrooms, onions, and broth into a nice creamy gravy. 
  9. If the gravy is too thick, add a little more bone broth/coconut milk/water until the right consistency is reached. 
  10. Pour gravy over meatballs and garnish with remaining tablespoon of minced parsley. This dish makes a wonderful appetizer as is, or main course when served over spaghetti squash, cauliflower rice, sautéed veggies, or warmed zucchini noodles.
