Roasted Fig Ice Cream {AIP, Paleo, Fruit Sweetened}


Summer is coming! The time of year when the thought of being in the kitchen brings fear and minds go to salads and cold treats when it comes to food. Well at least that's where my mind goes. Salads and ice cream...seems counterproductive, but they balance each other out (right?)

Today was the first day that I allowed myself to admit that it's summer here in Dubai. it's been pushing 100F for a couple of weeks and may have topped out at 102 a time or two already, but I got in my car this afternoon, burned my fingers on the steering wheel and saw 108 on the weather app. Summer is actually here!

This 'roasted fig ice cream' couldn't come at a better time. It's sweet and creamy and cooling and reminds me of this caramel swirl ice cream I once got at reunion in upstate New York (where it wasn't ice cream weather, but we ate it anyway).  This yummy treat is fruit sweetened and 100% AIP. Plus, no need for an ice cream maker

Seriously, what are you waiting for?? It's time to make this ice cream already.
