One of the fun challenges of the AIP diet is figuring out what to eat for breakfast. Most days I enjoy meat and veggies, but some days I want something that feels more like breakfast. This 'Oat-less' oatmeal fits the bill. Plus, you still end up with veggies and healthy fats. Add a little sausage patty and you've got a full meal.
Pumpkin 'Oat-less' Oatmeal
Serves: 3 - 4
In a small sauce pan, boil
1 1/2 cups riced cauliflower with about a cup of water
Once the cauliflower is tender, mix in
- 1 1/2 cups pumpkin purée (canned works)
- 1/2 t cinnamon
- 1/4 t ground cloves
- 1/4 t ground ginger
- 1 1/2 T coconut butter
- 1 1/2 T maple syrup
- 1/2 cup coconut milk
Stir and simmer until pumpkin is hot and flavors have mixed. To serve, place 1/2 mashed banana in each bowl and mix in 1/3 of the pumpkin mix. Top with 1-2 T coconut milk and a few chopped strawberries. I prefer not to mix in the added coconut milk as it feels more like cereal.
The pumpkin mix can be made in advance and refrigerated until needed, just add the banana right before serving.
